Seolleongtang has
been familiar to, and enjoyed by Daejeon citizens
ever since a small restaurant near Daejeon
Station became famous for its recipe with
more than 40 years of history.
Seolleongtang is loved for the characteristic
taste of its broth that comes from long boiled
beef bones and meat, which goes superbly well
with the famous gimchi and kkakdugi that are
matured well. |

Daejeon's Samgyetang
has a distinctive taste when compared with
soups of other regions. This is due to the
early development and refinement over the
years of the recipe, which uses Geumsan ginseng.
It is regarded as a designated traditional
health food of Daejeon and boasts a light
and refreshing flavor. Its easy digestion
makes it a popular dish with people of all
ages. |

Dolsotbap contains
nonglutinous rice, minor cereals (foxtail
millet, beans, sorghum), ginkgo nut and carrot.
It is generally served with side dishes such
as fresh vegetables and 20 types of cooked
wild greens. It has gained its fame by the
wonderful taste of the bap (cooked rice),
which is far superior to the bap made in a
traditional cauldron, and as such has become
a representative food of Daejeon. |

Sutgol's cold noodle
soup is made according to the same recipe
as the traditional Pyeongyang cold noodle
soup. When the noodles are added to the chicken
broth or the juice from the white salted radish
(a different kind of gimchi), it gives a uniquely
tart taste. |

This is one of
the most delicious traditional meat dishes
of Korea. Ribs of pork are seasoned with soy
sauce, gochujang (thick soypaste mixed with
red peppers), green onion, garlic, juice from
ginger, and refined rice wine. Then, they
are roasted on a grill. Dwaeji galbi cooked
in this way tastes light and scrumptious and
is therefore popular with foreigners. |
